Peach as a source of bioactive compounds: the use of Gamma Irradiation to preserve fruit quality during postharvest and processing

Resume. Using peach cultivars from the region, the effect of gamma irradiation (GI) on peaches will be evaluated. GI technology is an alternative to the use of phytosanitary products and heat treatments for fruit preservation and is contemplated in the Argentine Food Code. The effect of different GI doses in whole fruits will be evaluated as a strategy to inactivate pathogens and preserve quality during postharvest. The effect on organoleptic maturation and storage will be studied at the proteome and biochemical-molecular levels. Microscopy, microbiology, molecular biology and biochemistry techniques will be used, including different omics. Write us to tell you about the project!
